I love muffins.. and I was offered a french toast muffin at one of my favorite coffee shops. I can’t believe I hadn’t thought of that! It was way too sugary for me, but it definitely put me back in my kitchen laboratory. This is the recipe I came up with. But beware, these little guys are addicting!

Batch Yields 12 muffins

Preheat oven to 350

Ingredients

(muffin batter)

2 cups flour
1 cup milk
1/2 cup melted butter
1 egg
1 tsp maple syrup
1 cup brown sugar
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp vanilla extract

(muffin topping)

1 slice of bread
1 egg
1 tsp cinnamon
2 tbsp milk
1 tbsp maple syrup

For muffin batter: mix all of the dry ingredients, then add the wet. Scoop evenly into the 12 muffin trays.

For topping: Crumble or cube the bread. Mix other ingredients in a small bowl. Soak the bread in the mixture. Spoon evenly onto the top of the muffins. Sprinkle with a little sugar if desired. Bake for 15-20 minutes or until you can put a toothpick into the center and pull it out dry.
